I saved this recipe on Instagram ages ago, and I promise it’s everything you would expect for a summer dinner dessert. Peach summer forever.
Filling:
500 grams of peaches
1/4 cup of brown sugar
2 tablespoons of sugar
Juice of 1/2 lemon
1 teaspoon of vanilla extract
A pinch of salt
2 tablespoons of cornstarch
Topping:
1 cup of flour
1/2 cup of sugar
2 teaspoons of baking powder
1/4 teaspoon of salt
3/4 cup of milk (180ml)
85 grams of unsalted butter, melted
2 teaspoons of vanilla extract
Preheat the oven to 180°C (350°F) and grease a baking dish.
In a large bowl, add the sliced peaches, brown sugar, sugar, lemon juice, vanilla, and cornstarch. Mix well and add the filling to the baking dish.
In another bowl, mix the flour, baking powder, salt, and sugar. Add the milk, butter, and vanilla; mix and pour the topping over the filling. I like it when the peaches are not perfectly covered and peek through.
Bake for about 50 to 55 minutes, until the filling is bubbly and the top is golden brown.
Remove from the oven and serve hot with vanilla ice cream, crème fraîche, or whipped cream!
